Pork tenderloin
couple of beaten eggs
saltine crackers mashed into crumbs
canola oil
salt
pepper
Slice the tenderloin crosswise
in 1/2 inch slices. Pound with meat tenderizer til flat. Dip in
beaten eggs (I add a little water); then dip and roll in those stale
saltines you've run through the blender to make into crumbs
Now--fry in canola oil on medium til golden, flip to get other side.
Salt and pepper lightly and drain on paper bags or towels.
Great with Gramma's fried noodles! We can eat
them like snacks around here!!
Great sandwiches with ketchup and pickles!
