Makes 4 servings
4 pork chops (about 4 oz each)
salt and pepper to taste
2 tbsp olive oil
14 oz. sauerkraut, fresh or canned
1/4 onion, thinly sliced (if desired)
1 tsp dried parsley flakes
1/4 tsp celery seed/salt
1/4 c. light beer
Preheat oven to 350.
Sprinkle pork chops with salt and pepper to taste. Heat olive oil
in skillet and brown pork chops on both sides. Set aside. Rinse &
drain sauerkraut, pressing excess liquid out. Mix sauerkraut, onion,
parts, and celery seed. Put pork chops in baking dish, then cover
with sauerkraut. Pour beer and drippings from skillet over. Cover
tightly and bake at 350 for 90 min.
