AUNT SARAH'S SPAGHETTI CARBONARA

"The Carbonara recipe, never had a written one........The gentleman, Giorgio Angelucci, that we met in a tavern across the street from the foot of the Spanish Steps in Rome, invited Ken and I to his home for drinks and a visit with he and his Norwegian wife Asta. We went, he was an artist, we bought 2 of his paintings and they invited us to stay for dinner. While he cooked spaghetti Asta told me how to make Carbonara so you'll have to just throw it together like I have done. It always tastes slightly different but is always great!"

For about 4 people: 1/2 pound of bacon, chopped into small pieces and brown it. Drain the bacon and all but a tbsp. of the drippings. Into those drippings sauté diced onion to your taste, I use about a 1/2 cup of sweet onion, and garlic to taste, about 2-3 large cloves minced.

Meanwhile boil/cook the spaghetti noodles and drain. Whisk an egg in a bowl with about a cup of milk and set aside. Put the drained noodles in the skillet (low heat) with the onion and garlic, sprinkle with salt, pepper, about a half cp. of shredded mozzarella, and almost a 1/2 cup of grated parmesan cheese. Put the drained bacon bits back in on top of all that and then pour the milk/egg mixture over all. Toss it all together with 2 big forks till the egg mixture is set and then Serve! It's yummy!
